A NEW restaurant fusing English and Indian favourites with a constantly revolving menu is preparing to open its doors in place of a former deli business in Leigh.

Le Paragon is set to be the latest business joining Leigh’s Broadway and owners Ciril Joseph and Bilby Augustine are working hard ahead of a grand opening next week.

The restaurant is replacing the former Gourmet Deli Co which closed its doors last year and will focus on “variety” as bosses switch up the menu every week and rotate their offering.

This will include homemade samosas, lamb, chicken and veg alongside south Indian seafood dishes.

And an afternoon tea experience will be offering snacks from different cultures.

Bilby said: “I think the idea makes sense, with the variety we offer, people will want that, people expect to taste a wide variety of food and they get bored of the same menu every day.

“Initially we will slowly introduce more meals, to start with, a wide variety of menus including a menu of the day and the week and then introduce those into our main menu.

“You don’t want the same food every day and you want to try a variety of food and enjoy how it tastes.”

They are hoping the ever-changing menu will help the business stand out among the ever-growing crowd of restaurants based in Leigh on the Broadway.

She added: “No one has a proper fusion menu around here and we are planning to have a variety of food.

“If we do the same as others, it is quite boring, people want more and that is the main idea.”

Bilby added that Ciril will be the man running the restaurant, having been in the business for nearly 20 years and having experience with various types and styles of cooking.

Ciril said: “When we do the brunch café, it will be an English and continental cooking style and there will be snacks, home made samosas and buttes and we are planning to do things for special that people like.

“Indian cooking is not the main focus, it is a little part of our offer.”
